A Sure Bet For Holiday Potluck

It’s a holiday weekend and time to celebrate the warm weather season! Picnics, parties, porch openings, soccer tournaments, the Burlington City marathon, or a U-2 concert- whatever is on your schedule, you’re sure to need something fast and portable to fuel the fun. My Joy Luck Pot Stickers fill the bill in every way: beautiful, healthy food that makes a great appetizer, picnic item, or main course. Best of all, they take less than 30 minutes to prepare and reheat nicely in the microwave. This batch serves 6-10 people. Enjoy the weekend!

Joy Luck Pot Stickers
- 2 pounds of frozen oriental dumplings (I like the Ling Lings brand from Costco)
- 2 bunches of broccolini
- 2-3 cups small or medium sized frozen shrimp (optional)
- 2 6 ounce packages of baby spinach
- 2 tablespoons scallion, chopped
- 1 tablespoon canola or grapeseed oil

In a large pot of boiling water add pot stickers and cook according to package directions.  Drain. In a medium sized pot of boiling salted water add broccolini and shrimp, cook for 2-3 minutes, drain. Heat a large skillet with 1 tablespoon of oil. Add the pot stickers in batches, lightly browning both sides, place on a sheet of paper towel. Wilt the spinach in micro for 30 seconds on HI. Line a serving bowl with spinach, then add pot stickers and shrimp. Pour sauce over, and line broccolini around edges, top with scallions. It’s going to look gorgeous!

Hot and Sweet Sauce
- 1 cup soy sauce
- Three fourths cup maple syrup or brown sugar
- 1 tablespoons sesame oil
- 2 tablespoons Chili Garlic Sauce (Lee Kum Kee at supermarket)

Combine ingredients in a glass jar, cover, and shake well.
